
Ingredients
- 2 packeets agar powder
- 14 oz sugar
- 1 tsp salt
- Young green coconut
- 6 cups water including coconut juice
Preparation
Boil coconut juice together with water and some salt under low heat. Add the mixture of sugar and agar powder and boil with low heat without stirring. Turn down the heat when it gets boiled and stir occasionally till agar dissolves. Put down the pot when the agar melts. Pour into the rectangular tray spread with coconut shred. Burst the bubbles that appear on the surface with the sharp tip of the knife. Leave ‘ green coconut water agar ‘ to jell at the room temperature, take out the agar with a spatula, and cut it into required cubes with agar cutter.

Ingredients
- 2 cups of sticky rice powder
- 1 tsp salt
- 1 tablespoon sesame seeds ( for pounded sesame salt )
- Some boiled beans and fried dry fish
- 3 onions ( 1 for cooking with sticky rice, 2 for frying )
Preparation
Rinse the sticky rice and soak it for some time. Add some oil and turmeric powder in non-stick frying pan and heat it. When it begins to sizzle, add the shredded onion. Then put the sticky rice and some salt in it and stir it well. Then, add some water and boil the sticky rice covering it with a lid. Meanwhile, pound a tablespoonful of sesame seeds and a teaspoonful of salt in the mortar. Give an occasional stir to the sticky rice and pour a little more water in the frying pan until it is well-cooked. Afterwards, leave it with low heat until the outer part of sticky rice becomes the crusts. Put Si-Hta-Min on the plate, sprinkle pounded sesames salt and fried onion and serve it with either boiled beans or fried dry fish.

- 1 and ¼ cups water
- ½ teaspoon salt
- ¼ teaspoon baking soda ( to mix dough )
- ½ lb ½ oz sugar
- ½ coconut
- ½ lb 6 oz peanut oil
Preparation
Mix the sticky rice flour, rice flour, baking soda and salt in a blow well. Add water gradually and stir and knead until the mixture has the consistency of modelong clay. Mix the grated coconut sugar in blow and put it on the stove and stir well until the coconut mixture thickens. Coat your palm and fingers with oil. Take two tablespoonful of dough and make to form a small ball and flatten it with your hands. Put a spoon of coconut mixture in the center and roll it securely into dumpling. Then, try all the dumpling in deep oil. When dumplings become redden, turn them over and continue frying. Take out the fried dumpling and drain the oil. It can be enjoyed with plain tea.

Ingredients
- 4 cups sticky rice flour
- ½ cup rice flour
- Some warm water ( to mix dough )
- 1 coconut
- 1 teaspoon salt
- 15 ticals of jaggery
Preparation
Sift together sticky rice flour and rice flour into a large bowl. Gradually add water and knead to become a nice smooth dough and ferment it for about 15 minutes. Scrape coconut with a greater. Cut each jaggery into four pieces with a sharp knife. Take a small lump of dough and spread it across the fingers, put jaggery piece into the center and fold in the edges to cover the jaggery and roll it into a pellet-size ball. Repeat until all the dough has been filled and rolled. Put the balls into the boiling water. When well-cooked, they will float on the surface. Scoop up the floating pellets and put them into the bowl of cold water. Transfer the pellets onto a sieve. Change the water when it becomes warm.

( Steamed packed of fine rice flour dough with coconut )
Ingredients
- 1 and 1/2 cups of rice flour
- ½ cup of coconut liquid
- 1 teaspoon sugar
- ¼ teaspoon salt
- Some sago ( to make dough )
Preparation
Mix rice flour, coconut liquid, sugar and salt. Stream the wrapping banana leaves for 5 minutes to get softened. Coat the leaf with peanut oil. Put a tablespoonful of dough on the leaf, wrap it and seal it with toothpicks. Stream them well for 15 minutes and you will get the delicate rice cake. Cook the coconut liquid until it becomes oily. Then, cut the rice cake into cubes and sprinkle either coconut cream or sugar for serving.

- 1 cup rice
- 8 cups water
- Some salt
- 3 lb 8 oz coconut milk
- Some sugar
Preparation
Rinse rice for three times and boil with water. Stir gently with a flat ladle. When it gets boiled, add coconut milk, sugar and salt into the pot and boil without covering it till rice gets tender. When the rice starts to disintegrate, it is then ready to be served.
